Bill Granger’s Apple and Walnut Cake

- 125g unsalted butter
- 150g raw caster sugar
- 75g plain flour
- 2tsp baking powder
- 3 eggs, lightly beaten
- 100g ground almonds
- 50g walnuts, chopped (preferably freshly shelled)
- 1 large Granny Smith Apple, peeled, cored and diced.
To Serve:
- Icing Sugar
- Honey (optional)
- Lightly whipped cream
Method
- Preheat oven to 180C.
- Grease a 20cm square tin and line with baking paper, leaving the paper hanging over the sides to help lift out the cake.
- Cream the butter and sugar in a large mixing bowl till pale and fluffy. In another bowl, sift together the flour and baking powder. Using a large spoon, fold the flour and egg alternately into the creamed mixture. Fold in the ground almonds, the walnuts and raisins.
- Spoon the mixture into the tin and arrange diced apple on top. Bake for 50-60 minutes or until a skewer inserted into the middle of the cake comes out clean.
- Leave to rest in tin for 10 minutes before lifting out. Sprinkle with icing sugar and drizzle with honey if you like. Serve with whipped cream.
