Zucchini, peas and lemon breadcrumbs
- 3 zucchini, cut into batons
- 1 cup frozen peas
- 2 teaspoons olive oil
- 1 garlic clove, crushed
- 1 teaspoon finely grated lemon rind
- 1/4 cup fresh breadcrumbs
- 1/4 cup fresh mint leaves
- Method
- Step 1 Place zucchini and peas in a metal steamer. Place steamer over a large saucepan of simmering water. Cook, covered, for 3 to 4 minutes or until tender.
- Step 2 Meanwhile, heat oil in a small frying pan over medium heat. Add garlic, lemon rind and breadcrumbs. Cook for 3 to 4 minutes or until breadcrumbs are golden. Transfer vegetables to a bowl. Add mint. Toss to combine. Sprinkle with breadcrumb mixture. Serve.
